As its too hot for me to be doing any baking, and I'm doing as little cooking as possible too. So I'm curious to hear what other members are up to in their kitchens.
It doesn't have to be whipping up a charm or brewing a potion or spell. By being in the kitchen and feeling its the centre of your universe.... you know you're meant to be there and I'd love to share in what you're doing.
I'll add what I made for dinner last night (and having as left overs tonight) once I get a chance. Baby and two and a half year old just woke up and I need to decide who to stop screaming first. ;)
That's one of my favs to make too! I know I've said it before, but you can't go wrong with chicken soup, especially home made from scratch. :D
Last two days have been over 100 F (in SPRING) but today's max is back down in I think the 70s.... Max of 26 C for me. SO am hoping to get some cooking or baking down. I need to start on my Christmas/ midsummer biscuits. Mmmmm, lebekuchen...
This history breaking heatwave over, next one starts on Wednesday.... Wahhhhh!

But you just HAVE to have spiced cakes and bicuits at Christmas, no matter how hot it is. The place isn't the same without Stollen or lebekuchen... Hmmm, showing my German roots aren't I? ;) Good thing the stuff I like is stuff that you can make in advance and store in air tight containers. Otherwise we'd never of had them in Darwin's heat! Christmas is a sauna day and night with thunderstorms that topple buildings and lightning strikes that melt phones off the wall literally. Ahhhh, the memories.

This is one of the typical dishes I make in my house as its one I know the kids will eat! And as I have one who is fussy and doesn't like "mixed" foods or stuff cooked in sauces (but will eat this) and one who basically eats meat but not her veggies, rice, pasta, noodles, etc... I'm just glad I've found something they'll clean their plates of.
I have the official recipe of this in a book somewhere, but as I've severely modified it in places its not the same thing so here's my version....
Take either two large chicken breast or 4 chicken thighs (both skinless). Cut off excess fat and usual other bits and cut into bite sized pieces.
In a large bowl combine a good dash of sweet chilli saice, a couple of tablespoons of honey, a dash of sesame oil and enough soy sauce to coat the chicken in. Mix until honey is incorporated into rest of it.
Marinate the chicken in this mixture (stirring from time to time) for at least two hours.... Though seriously, I did it on Monday night by making the marinade, cutting the chicken, coating it and then cooking the chicken AND marinade together and it tasted just as good. But I also used thighs and they soak up the flavours faster than breasts.
In a heavy based frying pan, heat a dash of sesame oil and a good glug of canola, rice bran or vegetable oil. When hot, cook chicken in it in batches, if required, until cooked through and that honey soy glaze is starting to blacken on it. Don't get too much black or the kids may not eat it! :)
While this is happening, boil water and cook long life egg noodles or similar to their packet instructions and steam/ boil some whole green beans.
In another heavy based pan add about 3 or 4 tablespoons of crunchy peanut butter, another good dash of sweet chilli saice, a really good glug of soy sauce and combine until the peanut butter has melted. Don't allow to burn. You can add coconut milk to it at this point, but I tend to just use our full cream milk we get that is pasturised but not homoginise... meaning its still got HUGE chunks of cream in it and actually TASTES like milk. :) Add enough of the milk until mixture is almost to the thin liquid stage... but still has that "cling to food when poured over it" consistency. Gosh I use professional cooking terms. ;P
When all items are cooked.... place noodles and beans on a plate, add chicken and drizzle peanut sauce over the top.

During my last pregnancy I LIVED off noodles in this peanut sauce. It was about the only thing I would eat at one point and the sauce takes literally minutes to make and is sooooo yummy. :) I knew then I was having a boy as with both girls the very idea of anything containing peanuts made me want to hurl.
Tonight, if I don't fry in the 100 F + heat, I am planning on making my chicken mince and vege pasta bake. If I DO feel too fried to cook.... we're having cherios. ;D
