Jane, where do you get the nutritional yeast? In bulk or in a bag. I want to start experimenting with that ingredient.
I started with a recipe but I usually just go with what I have on hand. Here is what got me started (as copied from a friend's comment):
PARMESAN CHEESE
1 cup pine nuts, soaked 6-8 hours
Rinse & dehydrate until dry and crunchy.
Place in food processor and grid up fine. If too moist after grinding, place again and dehydrate for another 24 hrs. Keep refrigerate. Makes one cup.
Some variation:
crumble up one half of cauliflower until mealy, using a fine grater. Mix with 1/2 cup ground dehydrated pine nuts. It's great for pasta dishes!
FETA CHEESE
1 cup soaked pine nuts
1/2 cup soaked cashew nuts
11/2 cup rejuuvelac (anyone knows what is it??)
Blend nuts and rejuvelac until smooth and let ferment for 6 hrs. Scoop off the top layer and spread out in dehydrator 1/4 inch thick. Dehydrate for 6 hrs. then flip over and continue for 1-2 hrs more. Break up into small pieces and store in the fridge.
BEST CHEESE SAUCE FOR PASTA -
~ 1cup soaked almonds (soaked overnight)
~ 1/4 cup soaked macadamia nuts (soaked for 3 hrs)
~ 1 bell pepper, chopped
~ 1 tbs nutritional yeast flakes
~ 1 clove garlic
~ 1/2 tsp sea salt
lime or lemon
Rinse nuts, blend with all the ingredients till smooth!
But my basic recipe is
1 cup sunflower seeds soaked then drained (Forgot this one time.)
1 jalapeno
juice of one lemon
fresh garlic 1 or 2 gloves crushed
Combine in food processor until smooth. May need a bit more water so that it blends easier.
