Since Spring Equinox is right around the corner, I thought I would offer you one of my family's favorite spring recipes. You can find this one and more in Festival Feasts (2008, Spilled Candy Books). Enjoy!
Egg Custard
Prep Time: 15 minutes Cook Time: 15 minutes
Chill Time: 1+ hour Serves: 4-6
1 ½ c. heavy cream 6 egg yolks
¼ c. sugar 1 tsp. vanilla extract
medium sauce pan medium bowl
electric mixer
1. In the medium sauce pan, bring milk or cream to a boil.
2. Remove from heat and all the vanilla extract. Allow to sit for 10 minutes.
3. In a medium bowl, beat the egg yolks until creamy.
4. Add egg yolks to milk gradually, while mixing on low.
5. Cook over medium heat, stirring constantly until mixture thickens.
6. Refrigerate for at least an hour before serving.
